STRAWBERRY LEMON BLONDIES

1 cup unsalted butter, melted

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

Zest of 2 lemons

1/4 cup fresh lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh strawberries, hulled and chopped

1/2 cup white chocolate chips (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Stir until well combined. Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract, lemon zest, and lemon juice until the mixture is smooth.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

        Combine Dry & Wet Mixtures: Gradually fold the dry ingredients into the wet mixture using a spatula until just combined. Be careful not to overmix.

          Add Strawberries & Chocolate Chips: Gently fold in the chopped strawberries and white chocolate chips, if using, until they are evenly distributed in the batter.

            Bake: Pour the batter into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 25-30 minutes or until the edges are lightly golden and a toothpick inserted into the center comes out with a few moist crumbs.

              Cool: Once baked, remove the blondies from the oven and let them cool in the pan for about 10 minutes. Then, lift them out using the parchment overhang and transfer to a wire rack to cool completely.
