Ingredients

1 cup rolled oats

1 cup milk (or dairy-free alternative)

1/2 cup Greek yogurt (plain or vanilla)

2 tablespoons maple syrup or honey (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

1 cup fresh strawberries, hulled and sliced

1/4 cup cream cheese, softened

2 tablespoons powdered sugar (adjust to taste)

1 tablespoon lemon juice

1 tablespoon graham cracker crumbs (for garnish)

Instructions

Prepare the Base: In a mixing bowl, combine the rolled oats, milk, Greek yogurt, maple syrup, vanilla extract, and cinnamon. Stir until well combined.

Layer the Strawberries: Gently fold in half of the sliced strawberries into the oatmeal mixture. This will infuse the oats with a delightful strawberry flavor.

Mix the Cheesecake Filling: In a separate bowl, beat the softened cream cheese with the powdered sugar and lemon juice until smooth and creamy. This will create a cheesecake-like filling.

Combine and Chill: In a mason jar or a bowl, layer your oats mixture, followed by a layer of the cheesecake filling. Repeat the layers until you finish both mixtures, finishing with the cheesecake layer on top.

Top with Strawberries: Add the remaining sliced strawberries on top of the cheesecake layer. Sprinkle with graham cracker crumbs for that classic cheesecake crust flavor.

Refrigerate: Cover the jar or bowl with plastic wrap or a lid and place it in the refrigerator overnight (or for at least 4 hours) to allow the oats to soak and absorb the flavors.

Serve: In the morning, stir well before eating, and enjoy your delicious, creamy Strawberry Cheesecake Overnight Oats cold!
