For the Cinnamon Sugar Topping:

1/2 cup brown sugar, packed

1 tbsp ground cinnamon

For the Cream Cheese Frosting:

4 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 cup powdered sugar

1 tsp vanilla extract

1-2 tbsp milk (as needed for consistency)

Instructions

Prepare the Dough:

    - In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

      - In a large mixing bowl, whisk together flour and salt. Create a well in the center and add the yeast mixture, melted butter, and eggs.

        - Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.

          - Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

            Prepare the Cheesecake Filling:

              - In a bowl, beat together the softened cream cheese and sugar until smooth. Mix in the vanilla extract and egg. Gently fold in the diced strawberries and set aside.

                Assemble the Rolls:

                  - Preheat your oven to 350°F (175°C).

                    - Once the dough has risen, roll it out on a floured surface into a large rectangle (about 15x24 inches).

                      - Spread the softened butter evenly over the dough. In a separate bowl, combine brown sugar and cinnamon, then sprinkle it evenly over the butter-brushed dough.

                        - Spoon the cheesecake filling evenly over the sugar and cinnamon layer, making sure to leave a small border around the edges.

                          - Starting from one edge, carefully roll the dough tightly into a log. Pinch the seams to seal. Cut into 12 equal rolls.

                            Bake the Rolls:

                              - Place the rolls in a greased 9x13 inch baking dish, cover with a cloth, and let rise for an additional 30 minutes.

                                - Bake in the preheated oven for 20-25 minutes, or until golden brown.

                                  Prepare the Frosting:

                                    - While the rolls are baking, combine softened cream cheese, butter, powdered sugar, and vanilla extract in a bowl. Mix until smooth, adding milk as needed for desired consistency.

                                      Finish the Rolls:

                                        - Once the rolls are baked, remove them from the oven and allow them to cool for about 10 minutes. Drizzle the cream cheese frosting over the warm rolls before serving.

Enjoy your Strawberry Cheesecake Cinnabon Rolls fresh out of the oven!
