1 lb chicken breast, cut into bite-sized pieces

1/2 cup soy sauce

1/4 cup honey

2 tbsp brown sugar

2 tbsp rice vinegar

2 garlic cloves, minced

1 tsp fresh ginger, grated

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

2 tbsp sesame oil

1/4 cup green onions, chopped (for garnish)

2 tsp sesame seeds (for garnish)

Salt and pepper, to taste

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, honey, brown sugar, rice vinegar, minced garlic, and grated ginger. Add the chicken pieces and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more intense flavor.

    Prepare for Cooking: Heat sesame oil in a large skillet or wok over medium-high heat. Remove the chicken from the marinade, letting excess marinade drip off, and set the marinade aside for later.

      Cook the Chicken: Add the marinated chicken bites to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until they are golden brown and cooked through. Season with salt and pepper to taste.

        Make the Sauce: Once the chicken is cooked, pour the reserved marinade into the skillet. Bring to a simmer, then add the cornstarch slurry to thicken the sauce. Stir continuously until the sauce is glossy and thickened, about 2-3 minutes.
