1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

2 teaspoons garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon honey

For the Sticky Sauce:

3 tablespoons hoisin sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey

1 teaspoon cornstarch mixed with 1 tablespoon water

1 teaspoon sesame seeds

1 teaspoon crushed red pepper flakes (optional)

For the Noodle Bowl:

8 oz (225g) rice noodles or egg noodles

1 cup broccoli florets

1 bell pepper, sliced (any color)

1 carrot, julienned

2 green onions, chopped

Fresh cilantro for garnish

Additional sesame seeds for garnish

Marinate the Chicken: In a bowl, mix soy sauce, sesame oil, rice vinegar, garlic, ginger, and honey. Add the chicken pieces and toss well to coat. Cover and refrigerate for at least 30 minutes (or up to overnight).

    Prepare the Sticky Sauce: In a small saucepan, combine hoisin sauce, soy sauce, rice vinegar, honey, sesame seeds, and crushed red pepper flakes (if desired). Bring to a simmer over medium heat, then add the cornstarch mixture to thicken. Stir for 1-2 minutes until glossy and thickened. Remove from heat.

      Cook the Noodles: Prepare the rice or egg noodles according to package instructions. Drain and toss with a drizzle of sesame oil to prevent sticking. Set aside.
