Sticky BBQ Meatball & Mashed Potato Muffins

For the Meatballs:

1 lb ground beef (or turkey)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

2 tbsp fresh parsley, chopped (or 1 tbsp dried)

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

For the BBQ Sauce:

1/2 cup ketchup

1/4 cup brown sugar

2 tbsp apple cider vinegar

1 tbsp Worcestershire sauce

1 tsp garlic powder

1 tsp onion powder

1/2 tsp black pepper

For the Mashed Potato Muffins:

2 cups mashed potatoes (prepared with butter and milk)

1/2 cup shredded cheddar cheese

1/4 cup sour cream

1/4 cup green onions, finely chopped

Salt & pepper to taste

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.

    Make the Meatballs: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, parsley, salt, pepper, and smoked paprika. Mix until just combined, being careful not to overmix.

      Form the Meatballs: Shape the mixture into small meatballs, about 1 inch in diameter. You should have around 20-24 meatballs.

        Prepare BBQ Sauce: In a separate bowl, mix together the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, and black pepper until smooth.

          Bake the Meatballs: Place the meatballs on a baking sheet lined with parchment paper. Brush them generously with the BBQ sauce and bake in the preheated oven for 20 minutes, or until cooked through.

            Prepare the Mashed Potatoes: While the meatballs are baking, in a large bowl, combine the prepared mashed potatoes, cheddar cheese, sour cream, and green onions. Season with salt and pepper to taste.

              Assemble Muffins: Once the meatballs are done, reduce the oven temperature to 350°F (175°C). Spoon a layer of the mashed potato mixture into each muffin cup, filling them about halfway. Place one baked meatball on top of each potato base and spoon additional BBQ sauce over each meatball.

                Finish Baking: Top the meatballs with the remaining mashed potato mixture, covering them entirely. Bake the muffins in the oven for an additional 15-20 minutes until the tops are golden brown.

                  Cool & Serve: Remove the muffins from the oven and let them cool for a few minutes before gently removing them from the muffin tin. Serve warm, garnished with extra green onions if desired.
