1 lb flank steak, thinly sliced

1 cup long-grain white rice

2 cups beef broth

1 cup queso blanco (store-bought or homemade)

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Steak: In a bowl, combine the sliced flank steak with half of the cumin, smoked paprika, salt, and pepper. Let it marinate while you prepare the other ingredients (at least 10 minutes).

    Cook the Rice: In a medium saucepan, bring the beef broth to a boil. Add the rice, reduce heat to low, cover, and let it simmer for about 15-20 minutes until the liquid is absorbed and the rice is tender. Once cooked, fluff with a fork and set aside.

      Sauté Vegetables: In a large skillet or frying pan, heat olive oil over medium heat. Add the chopped onion, garlic, and bell peppers. Sauté for about 5-7 minutes, or until the onions are translucent and the peppers are tender.

        Cook the Steak: Push the sautéed vegetables to the side of the skillet. Increase the heat to medium-high and add the marinated flank steak to the skillet. Cook for 3-5 minutes until the steak is browned and cooked to your desired doneness, stirring occasionally.

          Combine Everything: Once the steak is cooked, lower the heat and stir in the cooked rice to combine with the steak and veggies. Pour the queso blanco over the mixture and gently fold until everything is coated and heated through. Adjust seasoning with additional salt and pepper if needed.
