For the Chicken Sliders:

1 lb ground chicken

1/4 cup breadcrumbs

2 tbsp Sriracha sauce (plus extra for serving)

Juice and zest of 1 lime

2 cloves garlic, minced

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

Slider buns (mini brioche or whole wheat)

For the Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 carrot, grated

1/4 cup cilantro, chopped

1/4 cup mayonnaise

1 tbsp apple cider vinegar

Juice of 1 lime

Salt and pepper to taste

For Garnish:

Lime wedges

Sriracha sauce

Prepare the Chicken Mixture:

    - In a large mixing bowl, combine the ground chicken, breadcrumbs, Sriracha, lime juice, lime zest, minced garlic, cumin, paprika, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

      Form Chicken Patties:

        - Divide the chicken mixture into equal parts and form mini patties, approximately 2-3 inches in diameter. You should yield about 8 to 10 sliders.

          Cook the Chicken Patties:

            - Heat a non-stick skillet or grill over medium heat. Lightly grease with a little oil if needed. Cook the chicken patties for about 5-7 minutes on each side, or until they reach an internal temperature of 165°F (74°C) and have a nice golden crust.

              Prepare the Slaw:

                - In a separate bowl, combine the shredded green cabbage, red cabbage, grated carrot, and chopped cilantro. In another small bowl, whisk together mayonnaise, apple cider vinegar, lime juice, salt, and pepper. Pour the dressing over the cabbage mixture and toss well to coat. Set aside.
