Sriracha Honey Glazed Carrots

1 pound baby carrots (or regular carrots, peeled and chopped)

3 tablespoons honey

2 tablespoons Sriracha sauce

1 tablespoon olive oil

1 teaspoon sesame oil (optional for extra flavor)

Salt and pepper to taste

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Glaze: In a small bowl, whisk together the honey, Sriracha sauce, olive oil, and sesame oil until smooth. Adjust the Sriracha according to your spice preference.

      Coat the Carrots: In a large mixing bowl, place the baby carrots. Drizzle the glaze over the carrots and toss them well until they are evenly coated. Season with salt and pepper to taste.

        Roast the Carrots: Spread the glazed carrots on a baking sheet lined with parchment paper in a single layer. This helps them roast evenly.

          Bake: Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through to ensure even cooking.
