For the Chicken:

1 pound boneless, skinless chicken thighs

1/2 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Oil for frying

For the Sriracha Honey Sauce:

1/2 cup honey

3 tablespoons Sriracha

1 tablespoon soy sauce

1 tablespoon rice vinegar

For the Waffle Bites:

1 cup all-purpose flour

1 teaspoon baking powder

1 tablespoon sugar

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

For Garnish:

Chopped green onions

Sesame seeds

Instructions
 

Marinate the Chicken:

    - In a bowl, combine chicken thighs and buttermilk. Allow to marinate for at least 30 minutes (or overnight for best flavor).

      Prepare the Waffle Batter:

        - In a mixing bowl, whisk together flour, baking powder, sugar, and salt. In another bowl, combine milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined.

          Make the Sriracha Honey Sauce:

            - In a small saucepan, whisk together honey, Sriracha, soy sauce, and rice vinegar. Heat over medium-low heat until warmed through and well-combined. Set aside.

              Fry the Chicken:

                - In a large skillet, heat oil over medium-high heat. In a separate bowl, mix flour, garlic powder, paprika, salt, and pepper. Remove chicken from buttermilk and dredge in the seasoned flour. Fry the chicken in the hot oil for about 6-8 minutes, until golden brown and cooked through. Drain on paper towels.

                  Cook the Waffle Bites:

                    - Preheat a mini waffle maker. Pour a small amount of waffle batter into the heated waffle maker and cook according to manufacturer instructions until golden brown. Repeat until all batter is used.
