6 large eggs

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/2 cup cherry tomatoes, halved

1/4 cup milk (dairy or non-dairy)

1/4 cup red bell pepper, diced

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil (for greasing)

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil.

    Prepare the Egg Mixture: In a large mixing bowl, crack the eggs and whisk them together with the milk, garlic powder, onion powder, salt, and pepper until well combined.

      Add the Veggies: Stir in the chopped spinach, feta cheese, cherry tomatoes, and red bell pepper until evenly distributed throughout the egg mixture.

        Pour into Muffin Tin: Pour the mixture into the prepared muffin tins, filling each cup about 3/4 full.

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg muffins are puffed and a toothpick inserted in the center comes out clean.
