Spinach Chicken Casserole with Cream Cheese and Mozzarella

2 cups fresh spinach, chopped

1 pound boneless, skinless chicken breasts, cooked and shredded

8 oz cream cheese, softened

1 cup mozzarella cheese, shredded

1 cup sour cream

1 cup cooked rice (white or brown)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

½ cup grated Parmesan cheese

2 tablespoons olive oil

Optional: red pepper flakes for a bit of heat

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook Chicken: In a skillet, heat olive oil over medium heat. Add the chicken breasts and cook until fully cooked through (about 5-7 minutes per side). Remove from skillet, allow to cool slightly, then shred.

      Prepare Spinach Mixture: In the same skillet, add chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool.

        Mix Ingredients: In a large mixing bowl, combine the softened cream cheese, sour cream, shredded mozzarella, cooked rice, garlic powder, onion powder, Italian seasoning, salt, pepper, and the wilted spinach. Stir until well mixed.

          Combine with Chicken: Add the shredded chicken to the spinach mixture and stir until evenly distributed.

            Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish. Spread evenly.

              Top with Cheese: Sprinkle grated Parmesan cheese evenly over the top of the casserole. For an extra gooey texture, add a bit more shredded mozzarella if desired.

                Bake: Place in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and slightly golden.

                  Serve: Remove from the oven and allow to cool for 5 minutes before serving. Garnish with optional red pepper flakes for a touch of heat.
