Spinach and Goat Cheese Frittata

8 large eggs

1 cup fresh spinach, chopped

1 cup goat cheese, crumbled

1/2 cup heavy cream

1/4 cup onion, finely diced

2 cloves garlic, minced

1/4 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon olive oil

Fresh herbs (like thyme or parsley) for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Aromatics: In an oven-safe skillet (preferably cast iron), heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent and fragrant, about 3-4 minutes.

      Add the Spinach: Toss in the chopped spinach and sauté for an additional 2-3 minutes until wilted. Remove the skillet from heat.

        Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, heavy cream, black pepper, and salt until well combined and slightly frothy.

          Combine Ingredients: Gently fold in the crumbled goat cheese and the sautéed spinach mixture into the egg mixture, making sure everything is evenly distributed.

            Cook on Stovetop: Return the skillet to low heat and pour the egg mixture over the spinach and onion mixture. Allow it to cook undisturbed for about 5 minutes, until the edges start to set.

              Transfer to Oven: Carefully transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed and the center is set. A knife inserted into the center should come out clean.

                Garnish and Serve: Once baked, remove the skillet from the oven and let it cool for a minute. Optionally, garnish with fresh herbs before slicing into wedges.
