Spinach and Artichoke Pasta Bake

12 oz (340g) pasta (penne or rotini)

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup vegetable broth

3 cloves garlic, minced

1 tsp onion powder

1 tsp garlic powder

½ tsp red pepper flakes (optional)

Salt and pepper, to taste

¼ cup breadcrumbs (for topping)

1 tbsp olive oil (for drizzling)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Prepare the Sauce: In a large mixing bowl, combine the softened cream cheese, sour cream, vegetable broth, minced garlic, onion powder, garlic powder, red pepper flakes, salt, and pepper. Whisk until smooth and well combined.

        Combine Ingredients: Add the chopped spinach, chopped artichoke hearts, ½ cup mozzarella cheese, and ¼ cup Parmesan cheese to the creamy mixture. Stir in the cooked pasta until everything is evenly coated.

          Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch (23x33 cm) baking dish, spreading it out evenly.

            Top It Off: Sprinkle the remaining mozzarella and Parmesan cheeses over the top of the pasta. Then, sprinkle the breadcrumbs evenly across the surface for an added crunchy topping.
