Spicy Thai Peanut Chicken Noodles

For the Noodles:

8 oz rice noodles

1 tablespoon vegetable oil

1 bell pepper, thinly sliced (red or yellow)

1 cup shredded carrots

3 green onions, chopped

2 cloves garlic, minced

1 cup cooked chicken, shredded

For the Spicy Peanut Sauce:

1/2 cup peanut butter (smooth or chunky)

1/4 cup soy sauce

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon lime juice

1 tablespoon sesame oil

1 teaspoon crushed red pepper flakes (adjust to taste)

1 tablespoon fresh ginger, grated

1-2 tablespoons water (to thin the sauce as needed)

For Garnish:

Chopped fresh cilantro

Crushed peanuts

Lime wedges

Extra red pepper flakes (optional)

Instructions
 

Prepare the Noodles:

    - Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions (usually about 4-6 minutes). Drain and rinse with cold water to stop the cooking process. Set aside.

      Make the Spicy Peanut Sauce:

        - In a medium bowl, combine peanut butter, soy sauce, honey or maple syrup, rice vinegar, lime juice, sesame oil, crushed red pepper flakes, and grated ginger. Whisk together until smooth. If the sauce is too thick, add water, a tablespoon at a time, until you reach your desired consistency.

          Sauté the Vegetables and Chicken:

            - In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

              - Add the sliced bell pepper and shredded carrots. Stir-fry for about 3-4 minutes until slightly tender.

                - Toss in the cooked chicken and stir until heated through, about 2 minutes.

                  Combine and Toss:

                    - Add the cooked noodles to the skillet along with the spicy peanut sauce. Toss everything together until well coated and heated through, about 2-3 minutes.

                      Serve:
