Spicy & Sweet Chewy Molasses Cookies

Ingredients
  

1 cup unsulfured molasses

1 cup sugar (plus extra for rolling)

1/2 cup unsalted butter, softened

1 large egg

2 1/2 cups all-purpose flour

1 tsp baking soda

1 tsp ground cinnamon

1 tsp ground ginger

1/2 tsp ground cloves

1/2 tsp ground nutmeg

1/4 tsp cayenne pepper (adjust for desired spice)

1/2 tsp salt

Instructions
 

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    In a large mixing bowl, combine the molasses, sugar, and softened butter. Use an electric mixer to cream these together until smooth and fluffy, about 2-3 minutes.

      Add the egg to the mixture and beat until well incorporated.

        In a separate bowl, whisk together the flour, baking soda, spices (cinnamon, ginger, cloves, nutmeg, cayenne), and salt.

          Gradually add the dry ingredients to the wet mixture, stirring until fully combined to form a soft dough.

            Using a spoon or cookie scoop, portion out the dough, rolling it into balls about 1 inch in diameter. Then, roll each ball in granulated sugar to coat.

              Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart, as they will spread while baking.

                Bake in the preheated oven for 8-10 minutes, until the edges are slightly firm but the centers are still soft. The cookies will firm up as they cool.

                  Once done, remove from the oven and let them cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.

                    Enjoy these spicy and sweet treats with a glass of milk or a cup of tea!
