Ingredients

2 boneless, skinless chicken breasts

2 tablespoons Sriracha sauce (adjust to taste)

1 tablespoon soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded lettuce

1 medium cucumber, thinly sliced

1 medium carrot, julienned

½ cup red bell pepper, thinly sliced

4 large flour tortillas or wraps

¼ cup mayonnaise

1 tablespoon lime juice

Cilantro leaves for garnish (optional)

Instructions

Marinate the Chicken:

    - In a bowl, combine Sriracha, soy sauce, olive oil, garlic powder, paprika, salt, and pepper. Mix until well incorporated.

      - Add the chicken breasts to the marinade, ensuring they are well coated. Cover and let marinate for at least 30 minutes (or up to 2 hours in the fridge for more intense flavor).

        Cook the Chicken:

          - Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade, letting the excess drip off.

            - Cook the chicken for about 6-7 minutes on each side or until it reaches an internal temperature of 165°F (75°C). Once cooked, remove from the pan and let rest for 5 minutes before slicing into thin strips.

              Prepare the Sauce:

                - In a small bowl, mix together the mayonnaise and lime juice. This will add a refreshing contrast to the spicy chicken.

                  Assemble the Wraps:

                    - Lay out a tortilla on a clean surface. Spread a generous tablespoon of the mayo-lime sauce over the tortilla.

                      - Place a handful of shredded lettuce in the center, then layer on the sliced chicken, cucumber, carrot, and red bell pepper. Add more Sriracha sauce if desired for extra heat.

                        - Sprinkle with cilantro leaves if using.

                          Wrap It Up:

                            - Fold the sides of the tortilla in and then roll it up tightly from the bottom to the top. Secure with a toothpick if necessary.

                              - Repeat the process with the remaining tortillas and ingredients.

                                Serve:

                                  - Cut the wraps in half diagonally and serve immediately. These spicy Sriracha chicken wraps pair beautifully with a side of cucumber salad or sweet potato fries.
