Ingredients

2 cups fresh blueberries, rinsed and drained

1 cup coconut water

1 tablespoon lime juice (freshly squeezed)

2 tablespoons honey or agave syrup (adjust for sweetness)

1 teaspoon chili powder (adjust for spice preference)

1/2 teaspoon jalapeño powder (optional for extra heat)

1 lime, zested

Pinch of sea salt

Instructions

Blend the Base: In a blender, combine the fresh blueberries, coconut water, lime juice, honey/agave syrup, chili powder, jalapeño powder (if using), lime zest, and a pinch of sea salt. Blend until completely smooth.

Taste and Adjust: Taste the mixture and adjust the sweetness or spice level as preferred. Add more honey for sweetness or more chili for heat.

Prepare Molds: If you haven't done so already, prepare your popsicle molds by rinsing them with cold water for easy removal later.

Pour Mixture: Carefully pour the blueberry mixture into the popsicle molds, leaving a little space at the top to allow for expansion in the freezer.

Insert Sticks: Gently place the popsicle sticks into the molds, making sure they are centered.

Freeze: Insert the molds into the freezer and let them freeze for at least 6-8 hours, or until completely solid.

Remove Popsicles: Once frozen, remove the popsicles from the molds. If they’re sticking, run warm water over the outside of the molds for a few seconds to loosen them.

Serve and Enjoy: Enjoy these spicy blueberry popsicles on a hot day for a refreshing treat with a kick!
