1 lb boneless, skinless chicken thighs

1 ripe peach, diced

1/4 cup peach preserves

2 tablespoons sriracha (adjust to taste)

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

Salt and pepper to taste

4-6 slider buns (preferably brioche)

1 cup arugula or mixed greens

1/2 cup crumbled feta cheese (optional)

Olive oil for grilling

Fresh mint leaves for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine diced peach, peach preserves, sriracha, apple cider vinegar, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to 1 hour to allow the flavors to meld.

    Preheat the Grill: Preheat your grill to medium-high heat. Brush the grates with olive oil to prevent sticking.

      Grill the Chicken: Remove the chicken from the marinade and shake off any excess. Place the thighs on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and they have nice grill marks.
