Ingredients

1 pound fresh green beans, trimmed

4 cloves garlic, minced

1 tablespoon chili paste (adjust to taste)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 tablespoons olive oil

1 teaspoon red pepper flakes (optional, for extra heat)

Salt and pepper to taste

2 tablespoons toasted sesame seeds (for garnish)

2 scallions, chopped (for garnish)

Instructions

Blanch the Green Beans: Bring a pot of salted water to a boil. Add the green beans and blanch for 2-3 minutes until bright green and slightly tender. Drain and immediately transfer them to an ice bath to stop the cooking process. Once cooled, drain again and set aside.

Prepare the Sauce: In a small mixing bowl, whisk together the chili paste, soy sauce, rice vinegar, sesame oil, red pepper flakes (if using), and a pinch of salt and pepper. Adjust the ingredients according to your spice preference.

Sauté the Garlic: In a large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

Stir-Fry the Green Beans: Add the blanched green beans to the skillet and toss them in the garlic oil. Sauté for 3-4 minutes until the beans are heated through and start to get a little blistered.

Add the Sauce: Pour the sauce over the green beans. Stir to coat the beans evenly in the spicy garlic mixture. Continue to cook for another 2-3 minutes, allowing the sauce to glaze the beans.

Serve: Remove from heat and transfer the spicy garlic green beans to a serving dish. Sprinkle with toasted sesame seeds and chopped scallions for garnish before serving.
