2 large onions

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice level)

1 tsp salt

1/2 tsp black pepper

1/2 cup buttermilk (or plant-based milk for a vegan option)

1 large egg (or flax egg for vegan option)

Instructions
 

Begin by peeling the onions and slicing them into thin petals (around 1/4 inch thick). Separate the layers gently and keep them aside.

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to ensure all dry ingredients are evenly distributed.

      In another bowl, whisk together the buttermilk and egg (or flax egg). This will create a wet mixture that helps the coating stick to the onion petals.

        Heat oil in a deep pan over medium-high heat, aiming for a temperature of about 350°F (175°C). You can check the temperature by dropping a small amount of flour into the oil; it should bubble and rise.

          Dip each onion petal into the wet mixture, allowing any excess to drip off before coating it in the dry flour mixture, ensuring each petal is evenly coated. Repeat until all petals are coated.

            Carefully place a few coated onion petals into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes, or until golden brown and crispy, flipping them halfway through for even cooking.

              Remove the fried onion petals using a slotted spoon and place them on a plate lined with paper towels to remove excess oil.

                Serve the crispy onion petals hot with your favorite dipping sauce, such as ranch, spicy mayo, or a tangy dipping sauce for an extra kick.
