Ingredients

1 lb fresh salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons Cajun seasoning

1 tablespoon olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 tablespoon honey

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1/4 cup chopped fresh parsley, for garnish

1 lime, cut into wedges (for serving)

Instructions

Marinate the Salmon: In a medium bowl, combine the Cajun seasoning, olive oil, lemon juice, minced garlic, honey, and cayenne pepper. Mix well, then add the salmon cubes. Toss to coat the salmon in the marinade. Cover and let it sit in the refrigerator for at least 30 minutes to 1 hour.

Preheat the Skillet: Heat a large non-stick skillet over medium-high heat. Add a drizzle of olive oil to the skillet, ensuring it coats the bottom.

Cook the Salmon: Once the skillet is hot, carefully add the marinated salmon cubes in a single layer, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side, or until the external edges are crispy and the salmon is cooked through. Use tongs to flip the salmon gently.

Season to Taste: Once cooked, taste the salmon bites and add salt and pepper as needed.

Garnish: Remove the skillet from heat and transfer the spicy salmon bites to a serving platter. Sprinkle with chopped fresh parsley for a burst of color and freshness.

Serve: Serve the Cajun salmon bites warm, accompanied by lime wedges for squeezing over the top. Enjoy with a side salad or your favorite dipping sauce!
