1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

4 large whole wheat or spinach wrap tortillas

1 cup mixed greens (spinach, arugula, or your choice)

1 avocado, sliced

1/2 cup diced tomatoes

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Hot sauce, for garnish (optional)

Instructions
 

Prepare the Chickpeas: In a medium mixing bowl, combine the drained chickpeas with olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until the chickpeas are well coated.

    Cook the Chickpeas: Heat a non-stick skillet over medium heat. Add the seasoned chickpeas to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are slightly crispy and heated through. Remove from heat and set aside.

      Assemble the Wraps: Lay out the wraps on a clean surface or a large plate. Start by adding a generous handful of mixed greens to the center of each wrap.

        Add the Chickpeas: Spoon some of the spicy chickpeas over the greens, then layer on avocado slices, diced tomatoes, red onion, and fresh cilantro.

          Wrap It Up: Fold the sides of the wrap inward, then roll from the bottom up to encase all the delicious fillings securely.

            Serve: Optional: Drizzle with hot sauce for an extra kick. Cut each wrap in half and serve immediately, or wrap them in foil for a meal on-the-go.
