Ingredients

1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water (plus additional for thinning sauce)

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon salt

1 cup buffalo sauce (store-bought or homemade)

4 large tortillas (whole wheat or spinach)

2 cups mixed greens (spinach, kale, or arugula)

1 avocado, sliced

1/2 cup red onion, thinly sliced

1/2 cup vegan ranch dressing (optional)

Fresh cilantro or parsley, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 450°F (232°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Cauliflower Batter: In a mixing bowl, whisk together the flour, water, paprika, garlic powder, onion powder, cayenne pepper, and salt until you achieve a smooth consistency. If the batter is too thick, add a little more water to reach a pancake-like texture.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring they are well coated. Shake off any excess batter and place them on the prepared baking sheet.

Bake the Cauliflower: Bake the coated cauliflower in the preheated oven for about 20-25 minutes or until they turn golden brown and crispy, flipping them halfway through for even cooking.

Buffalo Sauce Coating: While the cauliflower is baking, heat the buffalo sauce in a small saucepan over low heat. If you prefer a thinner sauce, add a splash of water until you achieve your desired consistency.

Toss the Cauliflower: Once the cauliflower is done baking, remove it from the oven and place it in a large bowl. Pour the warm buffalo sauce over the cauliflower and gently toss until each piece is well coated.

Assemble the Wrap: Lay out a tortilla on a clean surface. Start by adding a generous handful of mixed greens, followed by the spicy buffalo cauliflower, avocado slices, and red onion. Drizzle with vegan ranch dressing if desired.

Wrap It Up: Fold in the sides of the tortilla and then roll it up from the bottom to the top to create a wrap. Secure with a toothpick if needed.

Serve: Slice the wraps in half, garnish with fresh cilantro or parsley, and serve immediately.
