Spiced Pumpkin Oat Muffins

1 cup rolled oats

1 cup all-purpose flour (or whole wheat flour)

1 cup pumpkin puree (canned or homemade)

1/2 cup brown sugar, packed

1/4 cup maple syrup or honey

1/2 cup buttermilk (or use plant-based alternative)

1/4 cup vegetable oil (or melted coconut oil)

2 large eggs

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp ground ginger

1/4 tsp ground cloves

1/4 tsp salt

1/2 cup chopped nuts (walnuts or pecans) or chocolate chips (optional)

Preheat Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Stir together until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the pumpkin puree, brown sugar, maple syrup, buttermilk, vegetable oil, and eggs until smooth and creamy.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not over-mix. If you're adding nuts or chocolate chips, fold them in at this stage.

          Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full to allow for rising.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
