Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

2 carrots, grated

1 tablespoon olive oil

1 teaspoon cumin powder

1 teaspoon paprika

1/2 teaspoon turmeric

1/2 teaspoon garlic powder

Salt and pepper to taste

4 large whole wheat or spinach wraps

1 cup fresh spinach or mixed greens

1/2 cup plain Greek yogurt

1 tablespoon lemon juice

1 tablespoon chopped fresh parsley (optional)

1 teaspoon honey (optional)

Instructions
 

Prepare the Chickpeas:

    - In a mixing bowl, combine the drained chickpeas with olive oil, cumin, paprika, turmeric, garlic powder, salt, and pepper. Mix well until the chickpeas are evenly coated.

      Cook the Chickpeas:

        - Preheat a skillet over medium heat. Add the seasoned chickpeas and cook for about 5-7 minutes, stirring occasionally, until they are warmed through and slightly crispy. Remove from heat and set aside.

          Make the Yogurt Sauce:

            - In a small bowl, mix the Greek yogurt, lemon juice, fresh parsley, honey (if using), salt, and pepper. Stir until smooth and creamy. Adjust seasoning to taste.

              Assemble the Wraps:

                - Lay out each wrap on a flat surface. Spread a generous spoonful of the yogurt sauce evenly over each wrap.

                  - Add a handful of fresh spinach or mixed greens on top of the sauce, then layer the spiced chickpeas and grated carrots on top.

                    Wrap it Up:

                      - Starting from one end, carefully roll the wrap up tightly, tucking in the sides as you go to secure the filling. Repeat with the remaining wraps.

                        Serve:
