2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp ground ginger

½ tsp salt

¾ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup buttermilk

2 cups peeled and diced apples (preferably Granny Smith or Honeycrisp)

½ cup packed brown sugar

½ cup chopped walnuts or pecans (optional)

1 cup powdered sugar (for glaze)

2-3 tbsp milk (for glaze)

A pinch of cinnamon (for dusting)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a cupcake pan or line it with paper liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Mix in the vanilla extract.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, starting and ending with the dry ingredients. Mix until just combined.

            Fold in Apples and Nuts: Carefully fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

              Fill the Cupcake Pan: Divide the batter evenly among the prepared cupcake slots, filling each about ¾ full.

                Bake: Place the cupcake pan in the preheated oven and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

                  Cool: Once baked, remove the cakes from the oven and let them cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

                    Prepare the Glaze: In a small bowl, whisk together the powdered sugar and milk. Add more milk as necessary until you reach a pourable consistency.

                      Glaze the Cakes: Once the cakes are completely cooled, drizzle the glaze over the tops and allow it to set for a few minutes.
