Ingredients
  

1 cup quinoa (rinsed and drained)

2 cups water or vegetable broth

1 can (15 oz) black beans (rinsed and drained)

1 can (15 oz) corn (drained)

1 red bell pepper (diced)

1 cup cherry tomatoes (halved)

1 avocado (diced)

1/4 cup red onion (finely chopped)

1/4 cup fresh cilantro (chopped)

Juice of 2 limes

1/4 cup olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Optional: crumbled feta cheese or queso fresco

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until all liquid is absorbed. Once done, remove from heat and let it cool.

    Prepare the Dressing: In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined. Set aside.

      Combine Salad Ingredients: In a large mixing bowl, add the cooled quinoa, black beans, corn, diced red bell pepper, halved cherry tomatoes, diced avocado, red onion, and chopped cilantro.

        Dress the Salad: Pour the dressing over the salad mixture and gently toss to combine, ensuring everything is evenly coated.

          Serve: If desired, sprinkle crumbled feta cheese or queso fresco on top before serving. Enjoy either chilled or at room temperature!
