1 medium head of green cabbage, chopped

1 lb smoked sausage (such as kielbasa or andouille), sliced

1 large onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1 tablespoon apple cider vinegar

1 teaspoon sugar (optional, to balance the tanginess)

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Begin by washing the cabbage and slicing it into thin strips. Dice the onion and slice the sausage into bite-sized pieces.

    Cook the Sausage: In a large skillet or cast-iron pan, heat the olive oil over medium heat. Add the sliced sausage and cook until browned and heated through, about 5-7 minutes. Remove the sausage from the skillet and set it aside.

      Sauté Onions and Garlic: In the same skillet, add the diced onion and sauté for about 3-4 minutes until it starts to become translucent. Add the minced garlic and red pepper flakes (if using) and cook for an additional 1-2 minutes until fragrant.

        Add Cabbage: Gradually add the chopped cabbage to the skillet. Stir well to combine with the onions and garlic. The cabbage may seem a lot at first, but it will wilt down as it cooks.
