Ingredients

2 lbs russet potatoes, peeled and thinly sliced

1 cup sour cream

1 cup onion, finely chopped (yellow or sweet onion works best)

1 cup shredded cheddar cheese (plus extra for topping)

1 cup milk

1/4 cup green onions, chopped (for garnish)

1/2 cup breadcrumbs (Panko breadcrumbs preferred)

3 tablespoons butter

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Olive oil (for sautéing onions)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or butter.

Prepare the Onions: In a medium skillet, heat a tablespoon of olive oil over medium heat. Add the finely chopped onions and sauté for 5-7 minutes or until they are softened and slightly golden. Remove from heat and set aside.

Mix the Creamy Base: In a large mixing bowl, combine the sour cream, milk, garlic powder, onion powder, and half of the cheddar cheese. Mix well until smooth and creamy. Season with salt and pepper to taste.

Layer the Potatoes: Begin layering your ingredients in the prepared baking dish. Start with a layer of sliced potatoes, then add a layer of sautéed onions. Pour a portion of the creamy mixture over the layers. Repeat this process, finishing with a final layer of sliced potatoes on top.

Add Breadcrumbs and Cheese: In a small bowl, melt the butter and mix it with the breadcrumbs. Sprinkle this mixture evenly over the top layer of potatoes. Finish by adding the remaining shredded cheddar cheese on top for an extra cheesy layer.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for another 15-20 minutes or until the potatoes are tender and the top is golden brown and bubbling.

Garnish and Serve: Once baked, remove the casserole from the oven and let it cool for about 10 minutes. Garnish with chopped green onions before serving to add a fresh touch.

Enjoy your Creamy Onion Bliss Potato Casserole as a comforting side dish or a delightful main! 🍽️
