2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 tablespoon ground cinnamon

1/4 cup granulated sugar

1 cup powdered sugar (for icing)

1-2 tablespoons milk (for icing)

Preheat and Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and brown sugar together using an electric mixer, on medium speed until light and fluffy (about 2-3 minutes).

        Add Egg and Vanilla: Add the egg and vanilla extract to the butter-sugar mixture and beat until well combined.

          Combine Wet and Dry: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed just until combined. Do not overmix.

            Prepare Cinnamon Sugar: In a small bowl, mix together the granulated sugar and ground cinnamon.

              Shape the Cookies: Scoop about 1 tablespoon of dough and press it flat in your palm. Sprinkle a pinch of the cinnamon-sugar mixture in the center, then fold the dough over the filling and roll it into a ball. Place onto the prepared baking sheet, spacing them about 2 inches apart.
