Ingredients
  

1 cup stone-ground grits

4 cups chicken broth

1 cup shredded smoky Gouda cheese

1/2 cup grated Parmesan cheese

1 cup whole milk

1/4 cup unsalted butter

6 strips of bacon, chopped

1 small onion, finely diced

3 cloves garlic, minced

2 large eggs

1 tsp smoked paprika

1/2 tsp black pepper

Salt to taste

1/4 cup chopped fresh chives (for garnish)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the drippings in the skillet for later.

    Sauté Onions & Garlic: In the same skillet, add the diced onion and sauté for about 5 minutes until translucent. Add in the minced garlic and cook for another 1 minute until fragrant.

      Prepare the Grits: In a large saucepan, bring the chicken broth to a boil. Gradually stir in the stone-ground grits and reduce the heat to low. Cook the grits, stirring frequently, for about 20-25 minutes or until thickened.

        Combine Ingredients: Once the grits are cooked, stir in the butter, whole milk, smoky Gouda cheese, grated Parmesan, cooked bacon (saving a couple of bits for topping), smoked paprika, black pepper, and a pinch of salt. Mix until well combined.

          Add Eggs: In a separate bowl, whisk the eggs, then add them to the grits mixture, stirring quickly to incorporate the eggs without scrambling them.

            Transfer to Bake Dish: Preheat your oven to 350°F (175°C). Pour the gritty mixture into a greased 2-quart baking dish and spread it evenly.

              Bake: Sprinkle the remaining bacon bits on top. Bake in the preheated oven for 30-35 minutes, or until the top is set and slightly golden.

                Garnish and Serve: Once baked, let it cool for a few minutes. Garnish with freshly chopped chives before serving.
