Smashed Avocado Summer Rolls

2 ripe avocados

1 tablespoon lime juice

1 teaspoon chili flakes (adjust to taste)

Salt and black pepper to taste

8 rice paper wrappers

1 cup julienned carrots

1 cup cucumber, thinly sliced

1 cup red bell pepper, thinly sliced

1 cup fresh mint leaves

1 cup fresh basil leaves

1/4 cup sesame seeds (toasted, optional)

Peanut dipping sauce (for serving)

Instructions
 

Prepare the Avocado Filling: In a mixing bowl, scoop the ripe avocados and mash them with a fork. Add lime juice, chili flakes, salt, and black pepper. Mix until creamy and well combined. Set aside.

    Prep the Vegetables: Wash and prepare the carrots, cucumber, and red bell pepper. Make sure they are cut into thin, uniform strips for easy rolling.

      Soak Rice Paper Wrappers: Fill a shallow dish with warm water. Carefully dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes soft and pliable. Remove and lay it flat on a clean cutting board or towel.

        Layer the Fillings: On the soaked rice paper, spread a spoonful of the smashed avocado mixture in the center, leaving space at the edges. Top with a small handful of carrot, cucumber, red bell pepper strips, and a mix of mint and basil leaves. Sprinkle sesame seeds over the top if using.

          Roll It Up: Fold the sides of the rice paper over the fillings, then roll it away from you to form a tight cylinder. Repeat the process for the remaining wrappers and fillings.

            Serve: Arrange the summer rolls on a serving platter. Serve with peanut dipping sauce on the side for dipping.
