Slow Cooker Chicken Taco Soup

1 lb boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning (about 1 oz)

1 medium onion, diced

2 cloves garlic, minced

1 can (6 oz) tomato paste

4 cups chicken broth

1 cup bell peppers (any color), diced

1 cup frozen diced zucchini or fresh zucchini, diced

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro for garnish

Optional toppings: shredded cheese, sour cream, avocado, tortilla chips

Instructions
 

Prep the Chicken: Start by placing the boneless, skinless chicken breasts at the bottom of your slow cooker.

    Layer the Ingredients: Add the black beans, corn, diced tomatoes (with their juices), diced onion, minced garlic, diced bell peppers, and zucchini on top of the chicken.

      Season: Sprinkle the taco seasoning evenly over the mixture. Then, add the tomato paste and pour in the chicken broth. Stir gently to combine all ingredients while ensuring the chicken is submerged.

        Cook: Cover the slow cooker with the lid and set it on low for 6-8 hours, or until the chicken is cooked through and tender.

          Shred the Chicken: About 30 minutes before serving, remove the chicken breasts from the slow cooker. Use two forks to shred the chicken. Return the shredded chicken back to the slow cooker.

            Add Lime Juice: Squeeze the juice of one lime into the soup and stir well. This will brighten up the flavors.

              Taste and Adjust: Taste the soup and season it with salt and pepper to your liking. Let it cook for the remaining time to allow the flavors to meld together.
