Slow Cooker Chicken Fajita Chili

1.5 lbs chicken breast, boneless and skinless

1 medium onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can kidney beans, drained and rinsed

1 (28 oz) can diced tomatoes, with juice

1 cup corn (frozen or canned)

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon paprika

1 teaspoon oregano

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon cayenne pepper (adjust to spice preference)

1 lime, juiced

Fresh cilantro for garnish

Optional toppings: avocado, cheese, sour cream, tortilla chips

Instructions
 

Prepare Ingredients: Start by dicing the onion and bell peppers, and mincing the garlic.

    Sauté Aromatics (Optional): For deeper flavor, heat a skillet over medium heat and sauté the onion, bell peppers, and garlic in a little olive oil until softened (about 5 minutes). You can skip this step if you prefer a more hands-off approach.

      Transfer to Slow Cooker: Place the chicken breast at the bottom of the slow cooker. Add the sautéed veggies (or raw if skipped), black beans, kidney beans, diced tomatoes, corn, chili powder, cumin, paprika, oregano, salt, pepper, and cayenne.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be tender and easy to shred.

          Shred Chicken: Once cooked, remove the chicken breasts and shred using two forks. Return the shredded chicken to the slow cooker and stir everything to combine.

            Add Lime Juice: Squeeze the juice of one lime into the chili and mix well for a zesty finish.

              Serve: Ladle the chili into bowls and garnish with fresh cilantro. Add optional toppings like avocado, cheese, sour cream, or tortilla chips as desired.
