Slow Cooker Chicken Caesar Sandwiches

2 lbs boneless, skinless chicken breasts

1 cup Caesar salad dressing

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon black pepper

1 teaspoon salt

1 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional for heat)

8 soft sandwich rolls (preferably ciabatta or hoagie)

Fresh Romaine lettuce, chopped (for garnish)

Extra Parmesan cheese, for serving

Instructions
 

Prepare the Chicken: Place the chicken breasts in the slow cooker. Season with salt, black pepper, garlic powder, oregano, and red pepper flakes if using.

    Add Dressing: Pour the Caesar dressing over the chicken and sprinkle with grated Parmesan cheese. Make sure the chicken is evenly coated.

      Slow Cook: Cover and cook on low for 6-8 hours or on high for 4-5 hours, or until the chicken is cooked through and shreds easily with a fork.

        Shred the Chicken: Once cooked, use two forks to shred the chicken directly in the slow cooker. Stir the shredded chicken with the sauce to combine all the flavors.

          Prepare the Rolls: While the chicken is cooking, preheat your oven to 350°F (175°C). Slice the sandwich rolls in half and lightly toast them in the oven for about 5-7 minutes, until they are golden and slightly crispy.

            Assemble the Sandwiches: On the bottom half of each roll, place a generous serving of the shredded chicken mixture. Top with chopped Romaine lettuce and extra Parmesan cheese.

              Top It Off: Place the top half of the rolls on each sandwich. If desired, you can also drizzle a little extra Caesar dressing on top for added flavor.

                Serve: Slice the sandwiches in half if you prefer, and serve warm with extra Caesar dressing and Parmesan on the side for dipping.
