1 lb ground beef or turkey

1 cup diced chorizo

1 cup diced smoked sausage

1 large onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 cans (15 oz each) kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (28 oz) diced tomatoes (with juice)

2 cups chicken or beef broth

2 tbsp chili powder

1 tbsp smoked paprika

1 tbsp ground cumin

1 tsp dried oregano

1 tsp salt (to taste)

½ tsp black pepper (to taste)

½ tsp cayenne pepper (optional, for heat)

1 cup shredded cheddar cheese (for serving)

½ cup sliced green onions (for garnish)

½ cup sliced black olives (for garnish)

½ cup diced pickles (for garnish)

½ cup sour cream (for serving)

Instructions
 

Brown the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned. Add the diced chorizo and smoked sausage, cooking for an additional 5 minutes until nicely browned. Drain any excess fat.

    Combine in Slow Cooker: Transfer the beef and sausage mixture into the slow cooker. Add the diced onion, garlic, red and green bell peppers, kidney beans, black beans, diced tomatoes with their juice, and chicken or beef broth.
