Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, with juices

1 cup vegetable broth

1/2 cup balsamic vinaigrette dressing

1 tablespoon chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon crushed red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat and transfer the meat to the slow cooker.

    Add the diced onion, minced garlic, and bell pepper to the slow cooker with the meat.

      Stir in the kidney beans, black beans, diced tomatoes (including the juices), and vegetable broth.

        Pour in the balsamic vinaigrette dressing, and add the chili powder, cumin, smoked paprika, crushed red pepper flakes (if using), and season with salt and pepper. Mix well until all ingredients are thoroughly combined.

          Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors meld and the chili is heated through.

            Before serving, taste and adjust the seasonings if needed. If desired, garnish with fresh cilantro or parsley for a pop of color and freshness.

              Serve hot, with your choice of toppings such as shredded cheese, sour cream, or tortilla chips.
