4 bone-in, skin-on chicken thighs

1 cup balsamic vinegar

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon dijon mustard

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup cherry tomatoes, halved

Fresh basil or parsley for garnish

Prepare the Chicken: Pat the chicken thighs dry with paper towels and season generously with salt and pepper on both sides.

    Make the Marinade: In a medium bowl, whisk together balsamic vinegar, honey, soy sauce, minced garlic, dijon mustard, dried thyme, and rosemary until well combined.

      Slow Cook: Place the chicken thighs in the slow cooker, skin-side up. Pour the balsamic marinade over the chicken, ensuring to coat each piece well. Add the halved cherry tomatoes on top.

        Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through (internal temperature should reach 165°F).
