Ingredients
  

4 large flour tortillas

1 cup fresh mozzarella cheese, shredded

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

1 cup ricotta cheese

2 tablespoons olive oil

Salt, to taste

Black pepper, to taste

Balsamic glaze (for drizzling, optional)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the shredded mozzarella cheese, halved cherry tomatoes, chopped basil, and ricotta cheese. Season with salt and pepper to taste. Mix gently to distribute the ingredients evenly.

    Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

      Assemble the Quesadillas: Place a flour tortilla in the skillet. Spoon a generous amount of the cheese and tomato mixture onto one half of the tortilla, then fold the other half over the filling to create a half-moon shape.

        Cook: Cook the quesadilla for about 3-4 minutes on one side, or until it’s golden brown and the cheese starts to melt. Carefully flip it over using a spatula, and add the remaining tablespoon of olive oil to the pan if necessary. Cook the other side for another 2-3 minutes.

          Repeat: Remove from the skillet and place on a cutting board. Repeat the process with the remaining tortillas and filling mixture.

            Slice and Serve: Cut each quesadilla into wedges and serve warm. Drizzle with balsamic glaze if desired, and garnish with extra basil leaves for freshness.
