4 large flour tortillas

1 cup shredded sharp cheddar cheese (or your favorite cheese)

1/2 cup crumbled goat cheese (optional, for tanginess)

1/4 cup chopped fresh basil (or mint for a refreshing twist)

1 tablespoon olive oil (for cooking)

A pinch of salt and pepper (to taste)

Prepare the Filling: In a bowl, combine the shredded cheddar cheese, crumbled goat cheese (if using), and chopped fresh basil. Mix well.

    Assemble the Quesadillas: Place one tortilla on a clean surface. Spread 1/4 cup of fig jam evenly over the tortilla, then sprinkle a generous amount of the cheese mixture on top. Place another tortilla on top of the filling.

      Cook the Quesadillas: Heat a non-stick skillet over medium heat and add 1/2 tablespoon of olive oil. Once hot, carefully place the assembled quesadilla in the skillet. Cook for about 2-3 minutes, or until the bottom is golden brown and the cheese begins to melt.
