1 cup heavy cream

1 cup whole milk

½ cup granulated sugar

2 teaspoons unflavored gelatin powder

1 teaspoon vanilla extract

2 ripe bananas, pureed

¼ cup brown sugar

2 tablespoons unsalted butter

¼ teaspoon sea salt

Whipped cream and banana slices for garnish (optional)

Instructions
 

Prepare the Gelatin: In a small bowl, sprinkle the gelatin over 3 tablespoons of cold water. Allow it to bloom for about 5 minutes until it turns spongy.

    Heat the Cream and Milk: In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

      Add Gelatin and Vanilla: Once hot, remove from heat and stir in the bloomed gelatin until completely dissolved. Add the vanilla extract, whisking until combined.

        Incorporate Banana Puree: Stir in the pureed bananas until the mixture is smooth and well blended.

          Pour and Chill: Divide the mixture evenly among serving glasses or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

            Make the Caramel Sauce: In a saucepan over medium heat, combine brown sugar, butter, and sea salt. Stir occasionally until the mixture begins to bubble and caramelizes into a rich golden color (about 3-4 minutes). Remove from heat and let it cool slightly.

              Serve: Once the panna cotta is set, remove from the refrigerator. Drizzle the warm caramel sauce over each panna cotta. Optional: garnish with whipped cream and banana slices before serving.
