12 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup unsalted butter

1/4 cup extra virgin olive oil

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, melt the butter and olive oil together. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

      Add the Shrimp: Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

        Make the Sauce: In the same skillet, pour in the white wine, scraping up any browned bits from the bottom. Let it simmer for about 2-3 minutes until slightly reduced. Stir in the lemon juice and zest.

          Combine: Return the shrimp back to the skillet along with the cooked linguine. Toss everything together to coat the pasta in the sauce. If the pasta seems dry, gradually add some reserved pasta water until desired consistency is reached.

            Finish with Parsley: Remove from heat and stir in the chopped parsley. Adjust salt and pepper to taste for seasoning.
