1 lb large shrimp, peeled and deveined

1 cup jasmine rice

1 ripe mango, diced

1 red bell pepper, diced

1 avocado, sliced

1/2 cup red onion, finely chopped

1 cup black beans, rinsed and drained

1/4 cup fresh cilantro, chopped

2 limes (juiced)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: Hot sauce for serving

Cook the Rice: Begin by cooking the jasmine rice according to the package instructions. Typically, you'll need to rinse it under cold water, then boil it in water for about 15 minutes, allowing it to steam with the lid on for an additional 5 minutes. Set aside.

    Marinate the Shrimp: In a bowl, combine the shrimp with olive oil, garlic powder, smoked paprika, salt, and pepper. Let this sit for about 10-15 minutes to marinate.

      Cook the Shrimp: In a large skillet over medium-high heat, add the marinated shrimp. Cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and set aside.
