Ingredients

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 cup watermelon, cubed

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon honey or maple syrup

1 tablespoon sesame oil

Salt and pepper, to taste

1 head butter lettuce (or iceberg), leaves separated

1 red bell pepper, thinly sliced

1 avocado, diced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Watermelon Glaze:

    - In a small saucepan, combine the cubed watermelon, soy sauce, rice vinegar, and honey (or maple syrup). Cook over medium heat for about 5-7 minutes, stirring occasionally until the watermelon breaks down and the mixture thickens.

      - Remove from heat and strain the mixture through a fine mesh sieve into a bowl, discarding the solids. Set aside the glaze.

        Cook the Shrimp:

          - In a large skillet, heat olive oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

            - Add the shrimp to the skillet, season with salt and pepper, and stir-fry for 3-5 minutes until the shrimp turn pink and opaque. Drizzle the sesame oil over the shrimp and mix well.

              Assemble the Wraps:

                - Lay out the butter lettuce leaves on a platter. Spoon a portion of the cooked shrimp onto each leaf.

                  - Top with slices of red bell pepper and diced avocado.

                    Drizzle with Watermelon Glaze:

                      - Generously drizzle the prepared watermelon glaze over the shrimp-filled lettuce wraps.

                        Garnish and Serve:

                          - Sprinkle fresh cilantro on top and serve the wraps with lime wedges on the side for an extra burst of flavor.
