Shrimp Dirty Rice

1 lb large shrimp, peeled and deveined

2 cups long-grain white rice

4 cups chicken broth (or seafood broth)

1/2 cup onion, finely diced

1/2 cup green bell pepper, finely diced

1/2 cup celery, finely diced

3 cloves garlic, minced

1 tbsp Cajun seasoning

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

1 tbsp Worcestershire sauce

2 tbsp vegetable oil

Salt and pepper to taste

3 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Shrimp: In a bowl, toss the peeled shrimp with 1 tablespoon of Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Set aside to marinate for about 15 minutes.

    Cook the Vegetables: In a large skillet or Dutch oven, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, celery, and garlic. Sauté for about 5-7 minutes until the vegetables are soft and fragrant.

      Toast the Rice: Stir in the uncooked rice and continue cooking for another 2-3 minutes to toast the rice slightly, making it fragrant.

        Add Liquid: Pour in the chicken broth and Worcestershire sauce. Stir well to combine. Bring the mixture to a boil, then reduce the heat to low and cover. Allow to simmer for 15-20 minutes or until the rice is tender and has absorbed most of the liquid.

          Cook the Shrimp: In the last 5 minutes of cooking the rice, stir in the marinated shrimp. Cover again and let the shrimp cook until they turn pink and opaque, about 5 minutes.

            Fluff and Serve: Once fully cooked, remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork and mix everything together gently. Adjust seasoning if necessary.
