Shrimp Avocado Salad

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

Juice of 1 lime

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1 small jalapeño, finely chopped for kick

Cook the Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp, sprinkle with garlic powder, salt, and pepper. Sauté for about 2-3 minutes on each side until the shrimp turn pink and opaque. Remove from heat and let cool slightly.

    Prepare the Vegetables: While the shrimp are cooling, in a large bowl, combine the diced avocados, halved cherry tomatoes, diced cucumber, chopped red onion, and cilantro.

      Make the Dressing: In a small bowl, whisk together the remaining olive oil, lime juice, and a pinch of salt and pepper. If using jalapeño for heat, add it to the dressing as well.

        Combine Everything: Once the shrimp have cooled, add them to the bowl with the chopped vegetables. Pour the dressing over the salad and gently toss to combine until everything is evenly coated.

          Serve: Let the salad sit for about 10 minutes for the flavors to meld together. Serve chilled or at room temperature in individual bowls, garnished with extra cilantro if desired.
