2 large cucumbers

1 lb (450g) cooked shrimp, peeled and deveined

1 ripe avocado, diced

1/4 cup red onion, finely chopped

1/4 cup cherry tomatoes, diced

2 tablespoons fresh cilantro, chopped

1 lime, juiced

1 tablespoon olive oil

1/2 teaspoon garlic powder

Salt and pepper to taste

Optional: Sliced jalapeños for added heat

Prepare the Cucumbers: Start by slicing each cucumber in half lengthwise. Using a spoon, carefully scoop out the seeds to create a hollow boat.

    Mix the Filling: In a medium bowl, combine the cooked shrimp, diced avocado, chopped red onion, diced cherry tomatoes, and cilantro. Gently mix to combine.

      Season the Mixture: Drizzle the lime juice and olive oil over the shrimp mixture. Add the garlic powder, salt, and pepper. If you want some heat, add sliced jalapeños. Mix gently to ensure the avocado does not get mashed.
