Ingredients

For the Grits:

1 cup stone-ground grits

4 cups water or low-sodium chicken broth

1 cup shredded sharp cheddar cheese

½ cup heavy cream

3 tablespoons unsalted butter

Salt and pepper, to taste

For the Shrimp:

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon lemon juice

½ teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Grits: In a medium saucepan, bring 4 cups of water or chicken broth to a boil. Slowly whisk in the stone-ground grits, reduce the heat to low, and cover. Cook for about 20-25 minutes, stirring occasionally until the grits are thick and creamy. Stir in the butter, heavy cream, and cheddar cheese. Season with salt and pepper to taste. Cover and keep warm.

Prepare the Shrimp: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Cook the Shrimp: Add the peeled and deveined shrimp to the skillet. Season them with smoked paprika, cayenne pepper, salt, and black pepper. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque.

Add Flavor: Drizzle the lemon juice over the cooked shrimp and let it simmer for an additional 1-2 minutes, allowing the flavors to meld together.

Serve: Spoon a generous portion of grits onto each plate. Top with the garlic butter shrimp. Garnish with chopped green onions and parsley. Serve immediately and enjoy the delightful flavors!
