Sesame Ginger Chicken Lettuce Wraps

1 lb ground chicken

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 cup bell pepper, finely chopped (red or yellow)

1 cup shredded carrots

1 tablespoon low-sodium soy sauce

1 tablespoon hoisin sauce

1 teaspoon rice vinegar

1 tablespoon honey or maple syrup

2 tablespoons sesame seeds, toasted

1/4 cup green onions, sliced

1 head of butter or iceberg lettuce (for wraps)

Optional garnishes: cilantro leaves, additional sesame seeds

Instructions
 

Heat the Oil: In a large skillet, heat the sesame oil over medium-high heat.

    Cook the Chicken: Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes.

      Add Aromatics: Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

        Incorporate Vegetables: Add the finely chopped bell pepper and shredded carrots into the skillet. Sauté for about 3-4 minutes until they start to soften.

          Mix in Sauces: Pour in the soy sauce, hoisin sauce, rice vinegar, and honey (or maple syrup). Stir well to combine all the ingredients. Let it cook for an additional 2 minutes to meld the flavors.

            Add Sesame Seeds and Green Onions: Stir in the toasted sesame seeds and sliced green onions, mixing evenly.

              Prepare the Lettuce: While the chicken mixture is cooking, carefully separate the lettuce leaves. These will be your wraps.
